Ingredients

  • 7 ounces (200 g) white Allégro 9% cheese
  • 16 chop loin of lamb
  • 3 tbsp (45 ml) Dijon mustard
  • 1/3 cup (80 ml) olive oil
  • 1/3 cup (80 ml) breadcrumbs
  • 3 tbsp (45 ml) parsley, finely chopped
  • 1 tbsp (15 ml) chives, finely chopped
  • 2 tbsp (30 ml) garlic, minced
  • 1 tsp (5 ml) salt
  • 2 tsp (10 ml) pink pepper, crushed
  • 6 tbsp (90 ml) butter, melted

Directions

Preheat oven to 400°F (200°C). In a bowl, mix mustard, olive oil, breadcrumbs, parsley, chives, garlic, salt, pepper and melted butter. Grate Allégro 9% cheese and add to preparation. Mix well.

Coat lamb with mixture; place in baking pan and cook 30 minutes. When cooked, cut loin of lamb into 16 chops. Serve at once with mashed potatoes and a selection of vegetables.
