Ingredients

  • 2 chopped onions
  • 2 cloves garlic, chopped
  • 2 tbsp (30 ml) olive oil
  • 2 cans, 19 oz (540 ml) each, cubed tomatoes, not drained
  • 1 small cubed, peeled uncooked potato
  • 1/4 cup (50 ml) fresh basil, chopped
  • Salt and pepper
  • 2 cups (500 ml) milk
  • 1/4 cup lb (125 g) Allégro 9% Herbs & Spices cheese cut in small cubes
  • Fresh basil to garnish

Directions

In a saucepan, cook the onions and garlic in the oil until tender. Add the tomatoes and potato. Bring to a boil, cover and gently simmer for 25 minutes or until the potato is soft. Add the chopped basil, salt and pepper to taste. Purée in a blender or food processor until smooth, return to sauce pan. Add milk. Reheat without boiling. Garnish each portion with Allégro 9% Herbs & Spices cheese cubes and fresh basil and serve.
